Mulukhiyah the Egyptian way

  • 1 chicken - cut into quarters
  • 1/2 Kilo (Corchorus leaves (Molokhiah
  • 1 head onion - cut into quarters
  • 1/2 tsp. coriander
  • 1/4 tsp. Caraway
  • salt
  • 2 Chili Pepper
  • 1 cube Chicken stew

For Splash

  • 2 tbsp. Margarine
  • 1 tbsp. Caraway
  • 1 tbsp. coriander - roasted and grinded


1-For the rice (rinsed Egyptian rice) we stir it with a spoon of ghee for 3mins then we add boiling water then chicken broth cube, with a pinch of black pepper, or white pepper with salt

2-Boil the chicken in water and onion until done

3- Raise the chicken then drain the broth

4-To saute the chicken after boiling, we stir it in tomato paste melted with 2 spoons of chicken broth, black pepper, good nuts, mixed spices, salt and saute in a big spoon of ghee and 2 big spoons of oil.

5-Mix the mulukhiyah with a mixer until soft

6-The size of the broth is about 6 cups then we add coriander, cummin, chilli pepper. After the broth boils we raise it from the fire and we add the mulukhiyah and stir and leave for 5mins then place back on the fire until boiling then raise and leave without covering.

7-To make the splash: we place the ghee on the fire until warm, then add garlic and stir. Then add cumin, coriander and stir for seconds and raise and splash it on the mulukhiyah. Leave for 5mins on the surface and move it.

8-Serve the mulukhiyah with sauteed chicken and white rice.
