Ingredients

Ingredients

  • 1 chicken - chopped into quarters
  • 2 Spoon oil
  • 1 tbsp. Turmeric Powder
  • 2 cup rice - soaked and boiled with oil , salt and suitable spices
  • 1/2 cup pistachio - crushed

(Kishnah (rice topping

  • 1 tbsp. Butter
  • 3/4 cup zarkash - washed and drained -look like raisin : Iranian herbs)
  • Saffron - brewed in hot water
  • 1 tbsp. sugar
  • 1 Spoon rose water

ADLA spices

  • 2 stick cinnamon
  • 2 leaf Bay Laurel Leaves
  • 5 piece cardamom
  • 1 head onion, finely chopped
  • salt
  • 1 Spoon tomatoes puree
  • water - personal preferences

Preparation

1- Fry oil, turmeric, ADLA spices and onion 

2- Add the chicken and mix it for 10 minutes

3- Add salt, tomatoes puree and water and leave it on low heat until it is cooked

4- Fry zarkash with butter for 2 minutes

5- Add safran with sugar and rosewater and mix it all

6- Leave on a side then add pistachio and small amount of boiled rice and mix it

7- In the serving plate, place the rice and top it with zarkash mixture and chicken

8- Serve it with chicken stew on a side

Note

You can drain the chicken stew so you take the herbs off the stew
